Kongjang (Dried Beans in Soy)

Preparation

  1. Soak the dried beans for 6 hours.  Drain.
  2. Put beans with 2 cups water in a pot and let come to a boil for 5 minutes, then skim the surface of any foam.
  3. Add soy, sugar, and rice wine and lightly boil for about 30 minutes, uncovered, allowing the beans to absorb the sauce.
  4. Add the corn syrup at the very end of cooking, and stir to coat.  This can be served immediately or at room temperature, sprinkled with sesame seeds if desired.
