Ingredients
- 2 Kirby cucumbers or 1 English cucumber
- 1 minced clove garlic
- 1 scallion, minced
- 1 tbsp gochugaru
- 1 tsp of rice wine vinegar
- ½ tsp sugar
- 1 tsp each toasted sesame oil and sesame seeds
Preparation
- Cut cucumbers into rounds (no need to de-seed if using English cucumber). Rub 1 tsp. salt into rounds and let sit for 15 minutes.
- Drain well and mix in all other ingredients.
