Preparation

  1. Cut daikon into matchsticks and sprinkle with 1 tsp. salt, rubbing in well.  Let sit for about 20 minutes, then drain off excess liquid.
  2. Mix with remaining ingredients.  Check for seasoning, and dash with more fish sauce if necessary.
