Ingredients
- 1 pound sweet potatoes
- Neutral cooking oil (for frying) + 1 tbsps
- 3 tbsp sugar
- 2 tsps sesame seeds
Preparation
- Peel and cut sweet potatoes into ½ inch chunks. Soak in cold water to remove excess starch, about 30 minutes. Draw off water and dry well.
- Heat enough oil in large skillet to cover potatoes. The oil should register 350 before adding sweet potatoes.
- Fry sweet potatoes until cooked through, about 7 minutes, then transfer with slotted spoon to paper towels or a brown paper bag to drain off oil.
- Put the final tbsp of oil in a saute pan and stir in the sugar. Cook over medium-high until sugar melts and starts to caramelize. Turn heat to low and add cooked drained sweet potatoes. Toss well with sauce then garnish with sesame seeds.
