Goguma Mattang (Candied Sweet Potatoes)

Preparation

  1. Peel and cut sweet potatoes into ½ inch chunks.  Soak in cold water to remove excess starch, about 30 minutes.  Draw off water and dry well.
  2. Heat enough oil in large skillet to cover potatoes.  The oil should register 350 before adding sweet potatoes.
  3. Fry sweet potatoes until cooked through, about 7 minutes, then transfer with slotted spoon to paper towels or a brown paper bag to drain off oil.
  1. Put the final tbsp of oil in a saute pan and stir in the sugar.  Cook over medium-high until sugar melts and starts to caramelize.  Turn heat to low and add cooked drained sweet potatoes.  Toss well with sauce then garnish with sesame seeds.
