Ssamjang (Dipping Sauce)

WHILE NOT ACTUALLY a banchan side dish, ssamjang is a frequent accompaniment to Korean meals, as the most renowned dipping sauce for a wide variety of foods, particularly grilled meats (see Chapter 4).  It can be bought pre-made but is also easy to make at home if you’ve stocked your Korean pantry well.

Mix together

• ¼ cup doenjang with 1-2 tbsp of gochujang, according to your preferred spice level. 
• Add minced garlic clove and a couple of minced scallions, 2 tsps each of honey and toasted sesame oil, and 1 tsp sesame seeds.
