Preparation

  1. For 20 minutes, soak rice noodles in lukewarm water, while preparing other ingredients.
  2. Toss meat with soy sauce and garlic and let marinate while prepping remaining ingredients.
  3. Peel and cut potatoes into ½ inch half moons.  Cut tofu into slices of equal size.  Cut scallions into 1-inch lengths.
  4. Saute beef until browned, about 5 minutes, then put in 6 cups of water.  Heat to a boil, then cover and simmer for 5 minutes.
  5. Add potatoes and tofu, along with salt to taste, and cook potatoes until soft, about 5 minutes.
  6. Add drained rice noodles and scallions and simmer for another 2 minutes.  Serve hot.
