Ingredients
- 3 ounces of rice noodles
- 1/4 pound beef stew meat
- ½ tbsp soy sauce
- 2 cloves garlic, minced
- 3 medium potatoes
- ½ pound tofu
- 3 scallions
Preparation
- For 20 minutes, soak rice noodles in lukewarm water, while preparing other ingredients.
- Toss meat with soy sauce and garlic and let marinate while prepping remaining ingredients.
- Peel and cut potatoes into ½ inch half moons. Cut tofu into slices of equal size. Cut scallions into 1-inch lengths.
- Saute beef until browned, about 5 minutes, then put in 6 cups of water. Heat to a boil, then cover and simmer for 5 minutes.
- Add potatoes and tofu, along with salt to taste, and cook potatoes until soft, about 5 minutes.
- Add drained rice noodles and scallions and simmer for another 2 minutes. Serve hot.
