Ingredients
- 2 medium zucchini
- 2 medium potatoes, peeled
- 2 tbsp gochujang
- 1 tbsp each of doenjang and soy sauce
- 3 green chilis, sliced
- 2 cloves garlic, minced
- 3 ounces ground pork or canned clams (optional: omit for vegetarian version)
- 2 scallions, sliced
Preparation
- Cut zucchini into ½ inch pieces and potatoes into ¼ inch pieces.
- Put 4 cups of water in a pot and stir in gochujang, doenjang, and soy. Heat to a boil and be sure ingredients are dissolved.
- Add zucchini, potatoes and remaining ingredients except for scallions and simmer for 10 minutes, until potatoes yield.
- Garnish with scallions and serve.
