Kkultarae (King's Candy)

THIS IS A DECEPTIVELY simple recipe with tasty and fun results if you persevere.  The end result should be somewhat like thicker, chewier cotton candy.

Preparation

  1. Cook cornstarch over medium heat in a large pan for 10 minutes.  Spread out on a baking sheet and reserve.
  2. Bring corn syrup and sugar, vinegar, and ¾ cup water to a boil in a pot.  Boil until mixture attains 250 degrees on a thermometer (a candy thermometer is best).
  3. Pour into doughnut-shaped molds, preferably silicone, and chill in the refrigerator for an hour.
  4. xxPop candy out of molds, and roll in reserved cornstarch.  Then, pull into string-like candy: with your hands, spread into a wide ring, twist to make a new ring, then pull again.  Continue pulling and twisting to make longer and thinner threads of candy.  Repeat.
