Ingredients
- 1 cup red beans
- 1-2 cups brown sugar, divided
- 1 tsp cinnamon
- 1 tsp salt
- 1 cup sweet rice flour
- Pine nuts, for garnish
Preparation
- Cook red beans in water to cover until tender, about 1 hour. Drain and mash beans to a paste (or pulse them in a food processor). Mix bean paste with 1 cup of brown sugar, salt, and cinnamon. Set aside.
- Make rice balls by mixing sweet rice flour with 1 tbsp sugar and add ½ cup of water to form a dough (add up to ½ cup more water if the mixture is dry). Form into ½ inch balls.
- Put bean paste, 4 cups water, another ½ cup or more sugar and bring to a boil. Ladle in rice balls and cook until done around 10 minutes. Ladle into bowls and garnish with pine nuts.
