Ingredients
- 2 cups glutinous rice flour
- 7 tbsp sugar
- 1 tsp salt
- Food coloring, optional
- 1 ½ cup adzuki (red bean) paste: can be purchased at Asian markets or made at home; see danpatjuk recipe for directions)
- Cornstarch
Preparation
- Mix rice flour, sugar, and salt with 1 cup water in microwave safe bowl (you can add food coloring here if you like). Microwave for 3 minutes on high power. Remove and stir for another 3 minutes, creating an elastic dough.
- Divide red bean paste into 16 ping pong sized balls and set aside.
- Divide dough into two equal portions and shape into long cylinders, then divide into 8 equal pieces each. Wrap dough around red bean balls and seal. Roll each in cornstarch.
