METHOD:
Flavoring liquors or fermenting fruit from the vine is found the world around. Flavored liquors or wines can be found pre-made in establishments selling Korean spirits, but it can also be done at home. Pour a standard sized bottle of soju (750 milliliters) into a large container with a lid. Add ¼ sugar and about 1 cup of whatever fresh fruit you have on hand; let steep for at least two weeks, then strain. Popular fruits include citron (yuzu), raspberries, apples, and pears. Use what looks best! This method can also be used with rice wine, though reduce sugar to 2 tbsp.
