Ginger Cocktail

METHOD:

While not traditional to Korean culture, both ginger and soju are prevalent in Korean cuisine.  Ginger is thought to aid digestion, so this cocktail would make an excellent digestive.  Make sugar syrup using ½ cup sugar, ½ cup water, and 3 or 4 slices of ginger: bring to a bare simmer in a saucepan for about 5 minutes, then cool and discard ginger slices.  For one drink, mix 2-3 tbsps of ginger syrup, ½ cup soju, and squeeze of lemon or lime juice.  Serve over ice, topped with a bit of sparkling soda water, if you like.
