Zesty Tomato Hummus

Ingredients
  • 2 cans (10 oz each) ro*tel® original diced tomatoes & green chilies, drained well
  • 2 teaspoons lemon juice
  • 1 teaspoon ground cumin
  • 1 1/4 pounds prepared classic hummus
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • toasted cumin seeds and pita chips, optional
Directions
  1. Pulse drained tomatoes in the food processor until finely chopped. Place 2 tablespoons of chopped tomatoes in normal size bowl; set aside.
  2. Stir together hummus, remaining chopped tomatoes, lemon juice, cumin, oregano, and salt in a medium bowl.  Top with reserved tomatoes. Sprinkle with cumin seeds and serve with pita chips, if desired.
