Fina (Soresi) Frisella, Partinico, Palermo
(Yield: 4 servings)
1 broccoli head (cut in small pieces)
1 pound penne
2 tablespoons extra-virgin olive oil
1 onion (diced)
¼ cup pine nuts
½ cup golden raisins
14 ounces tomatoes (diced)
salt and freshly ground pepper
1. Bring large pot of salted water to boil and cook broccoli for approx. 3 minutes. Remove broccoli with slotted spoon and set aside, reserving water.
2.Add pasta to reserved water and cook until al dente.
3.While pasta is cooking, warm oil in large skillet over medium heat and cook onions, pine nuts, raisins and broccoli for approx. 5 minutes.
4.Add tomatoes to 1 cup of pasta water and cook for approx. 5 minutes or until pasta is al dente.
5.Drain cooked pasta and add to saucepan, cooking for another minute.
Season with salt and pepper and serve immediately.
