Radical Lemon Cubes

Makes 24 standard-size cubes (8 cubes per lemon; 1 cube equals ⅛ whole lemon)

When life gives you lemons, make radical lemon cubes! These zesty cubes will quickly become a new household staple. When you utilize the entire lemon, you get all the phytonutrients and aromatic oils contained in the fruit. All you need is a blender and an ice cube tray. The recipe also works with limes, or a combination of lemons and limes. Use a cube any time a recipe calls for lemon juice or lemon zest, if the recipe can tolerate a little extra moisture. Add to smoothies, blended juices, or soups, or zest up a glass of water or tea.

3 lemons, quartered

1 cup filtered water

Place the lemons and water in a blender or food processor and puree. Spoon the puree into ice cube trays and freeze. When frozen, the lemon cubes can be stored in a lidded container in the freezer.
