Sweet, creamy, tangy, and dilly… what’s not to love? Beets work wonders for digestion, blood pressure, and detoxification.
3 to 4 beets (remove greens for another use, such as a greens sauté or soup)
¼ cup cultured sour cream
1 tablespoon fresh dill, or 1 teaspoon dried
Sea salt
Preheat the oven to 425°F.
Wash and trim the beets.
Place on a baking sheet and roast in the oven until a knife slides in easily, about 45 minutes. When cool enough to handle, slide off the beets’ skin.
Dice the beets and toss with the sour cream, dill, and salt to taste. Serve warm or at room temperature.
