Makes 1 cup
This dressing tastes as unique as it sounds! A wonderful accompaniment to chicken, fish, or steamed vegetables. For a special treat, have it as a dipping sauce on your favorite gluten-free bread.
1 cup firmly packed flat-leaf parsley
3 to 4 garlic cloves
2 tablespoons fresh oregano leaves, or 2 teaspoons dried
2 tablespoons umeboshi plum vinegar
½ teaspoon sea salt
Finely chop the parsley, garlic, and oregano or gently pulse (4 or 5 times) in a food processor. Place in a small bowl.
Stir in the remaining ingredients.
