Yes, you can have cookies and have a radical metabolism! A classic treat made wholesome and delicious.
2 cups blanched almond flour
¼ cup Just Like Sugar, or to taste
½ teaspoon baking soda
¼ cup pastured unsalted butter
1 tablespoon pure vanilla extract
½ cup stevia-sweetened chocolate chips or unsweetened carob chips
Preheat the oven to 350°F. Line a baking sheet with parchment paper.
Combine the almond flour, Just Like Sugar, salt, and baking soda in a food processor. Pulse in the butter and vanilla until a dough forms.
Remove the blade from the processor and stir in the chocolate chips by hand.
Scoop the dough, 1 tablespoon at a time, onto the prepared baking sheet leaving about an inch between, and press down gently.
Bake for 6 to 8 minutes, or until the cookies appear set and are lightly browned around the edges.
