This is your new go-to for all of life’s celebrations. The surprise in this delicious cake is the addition of white beans, which add protein and a velvety texture to the batter. If you are a chocolate lover, see below for a chocolate variation.
2 cups canned organic unsalted white beans, drained and rinsed
6 large eggs
½ cup Just Like Sugar, or to taste
1 teaspoon pure vanilla extract
¼ cup coconut oil, melted
⅓ cup coconut flour, sifted
½ teaspoon sea salt
1 teaspoon baking soda
1½ teaspoons aluminum-free baking powder
Preheat the oven to 325°F. Line an 8- to 9-inch springform pan or round cake pan with parchment paper.
Combine the beans, eggs, Just Like Sugar, and vanilla in a food processor.
Add the coconut oil, coconut flour, salt, baking soda, and baking powder and puree well.
Pour the mixture into the prepared pan.
Bake for about 30 minutes. Check to see whether it’s done by inserting a knife or toothpick into the middle; it’s done if the tester comes out clean.
Variation: For chocolate cake, melt 1.5 ounces of unsweetened organic chocolate and stir into the batter.
