Makes one 8-inch square pan; cut into size of choice
Wrap these individually for a grab-and-go bar that’s actually healthy!
1 cup organic almond butter
¼ cup filtered water
3 tablespoon yacón syrup
1 teaspoon pure vanilla extract
½ cup shredded unsweetened coconut
½ cup unsweetened blueberries
1 tablespoon chia seed meal
2 teaspoons ground cinnamon
¼ teaspoon ground allspice
½ teaspoon aluminum-free baking powder
¼ teaspoon sea salt
¼ teaspoon baking soda
Preheat the oven to 350°F. Butter an 8-inch square baking pan.
Beat together the almond butter, water, yacón syrup, vanilla, and coconut in a large bowl, using an electric mixer.
Add the blueberries, chia seed meal, cinnamon, allspice, baking powder, salt, and baking soda and beat again until incorporated.
Pour the batter into the prepared pan and spread evenly.
Bake for about 20 minutes, or until the bars appear done.
Remove from the oven and allow to cool on a wire rack before serving. When cool, cut into bars and refrigerate or freeze.
