Serves 6
Simply put, this pie is creamy, dreamy, and delicious.
1 Almond Flour Piecrust (see below)
3 large eggs, slightly beaten
½ teaspoon sea salt
½ cup buttermilk powder (or Vitol/Rose Acre egg white protein powder)
½ cup Just Like Sugar, or more to taste
2 cups organic heavy cream, scalded (not boiled)
1 teaspoon coconut extract
Topping
Whipped cream (1 cup heavy cream, ½ teaspoon pure vanilla extract, plus Just Like Sugar or stevia to taste)
1 cup toasted shredded unsweetened coconut
1 teaspoon freshly grated nutmeg
Preheat the oven to 300°F. Press the piecrust dough in a 9-inch pie pan, then set aside.
Combine the eggs, salt, buttermilk (or protein powder), and Just Like Sugar in a large bowl, and mix well.
Add the cream and coconut extract slowly, and mix well.
Pour into the piecrust. Bake for 45 to 60 minutes, or until set.
Top with whipped cream, toasted coconut, and freshly grated nutmeg.
