Ciders Sweet and Dry

Cider is a simple name for a complicated creature. It doesn’t seem like something as basic as fermented apple juice should have as many variations as it does!

Most people are familiar with the modern version of cider—sparkling and sweet with a strong apple aroma. However, traditional ciders are quite different. They are usually not carbonated and have a higher alcohol potential.

This chapter includes both types of recipes. If you want to brew something sweet, try the Basic Cider, Perry or any recipe that uses ale yeast. Go for the Maple Syrup or the Chai-Spiced Cider recipes if you want a drier, wine-like cider experience.

Whether you prefer dry or sweet, you should still follow the warning in the Johnny-Jump-Up song—beware the delicious, yet very intoxicating cider! A pint or two can really pack a punch.
