(for a 3.5–4.5 litre slow cooker)
1 apple
150g diced bacon
5 cups finely shredded red cabbage
1 teaspoon sugar
½ teaspoon salt
1 teaspoon caraway seeds
1 tablespoon cider vinegar
30g butter
Peel and finely dice the onion. Peel, core and dice the apple. Place in the slow cooker with the bacon and cabbage. Add the sugar, salt, caraway seeds, vinegar and 1 tablespoon of water. Mix well.
Cut the butter into small pieces and dot over the top of the cabbage mixture.
Place lid on cooker and cook for 2 hours on High.
Add salt and pepper to taste.
