COMPOTE OF FRUIT

Serves 4−6

(for a 3.2−3.5 litre slow cooker)

This is a handy way to prepare a healthy breakfast. It can be served with cereals and yoghurt. Use a variety of fresh seasonal, canned, bottled and/or dried fruit. The following is an example of what can be used. If you use dried apricots or other dried fruits, you may need to increase the water accordingly (add approximately an extra ½ cup).

The compote can also be served as a dessert, in which case you can add a little liqueur such as Cointreau. With or without liqueur, it matches perfectly with Rice Custard (recipe page 379).

1¼−1½ cups berries or cherries

12 apricot halves (canned or bottled)

½−¾ cup pitted prunes

1/3 cup sugar, approximately (optional)

¾ cup water

Place all the ingredients in the slow cooker and stir to combine. Place the lid on the cooker. Cook on Low overnight or for 5–8 hours. If needed, add sugar to taste.
