Potato Dumplings with Cabbage
and Apples

Pierogi—Polish-style comfort food—are usually filled with meat, seafood, cheese, potatoes, or mushrooms. They can be quite time-consuming to make, but fortunately, excellent frozen varieties are available. Serve with pumpernickel-raisin rolls and a sliced tomato salad.

1 PREP 5 minutes   COOK 25 minutes   MAKES 4 main-dish servings

1 package (16 to 19 ounces) frozen

potato-and-onion pierogi

1 tablespoon butter or margarine

1 small onion, thinly sliced

1½ pounds green cabbage (1 small

head), sliced, with tough ribs

discarded

½ cup chicken broth

½ teaspoon salt

2 medium McIntosh apples

(about 12 ounces)

2 teaspoons cider vinegar

1 tablespoon chopped fresh dill

1. In large saucepot, cook pierogi as label directs.

2. Meanwhile, in nonstick 12-inch skillet, melt butter over medium-low heat. Add onion to skillet and cook, stirring occasionally, 7 minutes or until onion is tender and lightly browned.

3. Increase heat to medium-high; add cabbage, chicken broth, and salt and cook until cabbage is tender, about 10 minutes. While cabbage is cooking, core and cut apples into ¼-inch-thick wedges.

4. Add apples and vinegar to skillet with cabbage mixture and cook until apples soften, about 5 minutes.

5. Drain pierogi; toss with cabbage mixture and chopped dill.
