INGREDIENTS
(Optional) herbs and spice to taste
1 tbsp of baking powder
1 cup (about 46 grams) of crushed pork rinds
1/4 cup (about 27 grams) of parmesan cheese grated
3 large eggs
2 cups (about 210 grams) of grated mozzarella cheese
8 oz of cream cheese
DIRECTIONS
(I used a 12 x 17 jelly roll pan)
1. Heat up the oven to 375°F.
2. Line parchment paper over baking sheet.
3. Place mozzarella and cream cheese in large microwaveable bowl and microwave for one minute on high power. Stir and continue with the microwave for one extra minute, then stir again. This should completely melt the cheese.
4. Stir in baking powder, pork rinds, parmesan, and egg until well incorporated.
5. Spread mixture on the baking sheet and bake for 15-20 at 375°F, or until top is lightly brown.
6. Place pan on a rack to cool for 15 minutes, take the bread out and let cool directly on rack.
7. Slice and enjoy. You can use it to make sandwiches or eat plain.
