INGREDIENTS
Cream Cheese Filling
(Optional) 1 egg yolk
1/2 tsp of vanilla stevia drops for filling
8 oz of softened cream cheese
Base Egg Dough:
1/2 tsp of cream of tartar
(Optional) 1 tbsp of coconut flour
1/4 cup unflavored whey protein
3 oz of softened cream cheese
1/4 tsp of vanilla stevia drops for dough
4 eggs, separated
DIRECTIONS
1. Preheat the oven to 325 degrees.
2. Prepare two baking sheets by lining them with parchment paper.
3. Stir the cream cheese (8 ounces), stevia and egg yolk (optional) in a medium bowl.
4. Transfer to pastry or plastic bag.
5. In a separate mixing bowl, separate egg yolks from whites.
6. Add 3 oz. cream cheese, stevia, yolks and whey protein and coconut flour if using.
Mix until smooth.
7. Whip cream of tartar with the eggs whites until stiff peaks form.
8. Fold in the yolk/cream cheese mixture into the beaten whites.
9. Spoon batter onto each baking sheets (6 mounds on each). Press each mound to flatten a bit.
10. Add cream cheese filling in the middle of each batter.
11. Bake for 30 minutes at 325 F.
