INGREDIENTS
1 tbsp of pretzel salt
2 tbsp of Butter melted
2 tbsp of warm water
2 tsp of dried yeast, about 1 sachet
2 eggs room temperature
2 tsp of xanthum gum
1 1/2 cups of almond flour
4 tbsp of Cream Cheese
3 cups of shredded mozzarella cheese
DIRECTIONS
1. Heat up the oven to 390F.
2. Melt the cream cheese and mozzarella cheese in a microwave safe bowl and microwave in 30 seconds increments, stirring in between, until completely melted.
3. Combine warm water with yeast and let sit for 2 minutes and activate.
4. With dough hook attachment, add the xanthum gum and almond meal in a stand mixer and mix well.
5. Add yeast mixture, 1 tbsp of melted butter and eggs and mix well.
6. Add in the melted cheese, allow to knead the dough, about 5-10 minutes or until well combined.
7. Divide into 12 balls while the dough is still warm, then roll into a long thinly log and then twist to form a pretzel shape.
8. Transfer onto a lined cookie sheet, leaving small space between them.
9. Brush the remaining butter on top the pretzels and sprinkle with the salt.
10. Bake for 12-15 minutes in the oven or until golden brown.
