KETO OAT CORNBREAD

INGREDIENTS

(Optional) ¼ teaspoon of corn extract

4 eggs

¼ cup of water

1⁄3 cup of melted bacon fat or coconut oil

4 oz. melted butter

¼ teaspoon of salt

1½ teaspoon of baking powder

1⁄3 cup of whey protein isolate

1⁄3 cup of oat fiber

¼ cup of coconut flour

DIRECTIONS

1. Preheat oven to 350°F.

2. Grease a 10-inch cast iron skillet or a pie tin or small oven-proof skillet, place in the oven to warm up.

3. In a bowl, combine together all dry ingredients, add the bacon fat, melted butter, water and eggs. Beat using a hand mixer, then mix in corn extract.

4. Transfer mixture into the heated skillet and bake at 350° degrees for 18 to 20 minutes or until firm and top is lightly browned.

Tips

Please make sure there are no added sweeteners on the ingredients on whey protein isolate.
