INGREDIENTS
(Optional) 1 teaspoon of French Herbs
1 teaspoon of freshly squeezed lemon juice
1 teaspoon of salt
1 teaspoon of cream of tartar
2 teaspoon of baking powder
1/4 cup of melted butter
5 large eggs, divided
1/4 cup of peanut flour or coconut flour
1 1/2 cup of almond flour
DIRECTIONS
1. Preheat the oven to 350F
2. Whip the cream tartar and whites, let it stand in soft peaks.
3. Combine the lemon juice, melted butter, egg yolks, and salt in a bowl. Mix well, add baking powder, French herbs (if using), almond flour, and peanut flour (or coconut flour). Mix until all ingredient are finely integrated. (This dough will be heavy before you add egg whites)
4. To the dough, add 1/3 the egg whites and mix until obtaining a homogeneous mix.
Add the remaining egg whites mixture and slowly mix to incorporate everything. Do not over mix so the bread won’t lose volume.
5. Grease an 8x4 inch loaf pan with butter or coconut oil.
6. Pour mixture into the loaf pan and Bake for 30 minutes. It’s done when a skewer inserted in the bread comes out dry. Let stand about 30 minutes and unmold. Serve with butter.
