AVOCADO CHEESE MUFFINS

INGREDIENTS

Black pepper to taste

10 ounces of cheddar cheese cubed

2 avocados cubed

1/2 cup of heavy cream

10 eggs medium size

20 (about 50g each) beef patties

DIRECTIONS

1. Preheat the oven to 350°F

2. Place 1 beef patty in each large muffin tin cup, shape using a shot glass to level the inside.

3. Divide cheese an avocado evenly in the cups.

4. In a bowl, beat together heavy cream and eggs then pour in each of the muffin cups until avocado and cheese are covered. Season with black pepper.

5. Bake in the oven at 350 for 20 minutes, you can broil for an extra 1-2 minutes, if desired, until top is browned.
