To me, waffles are special and a little more involved than pancakes, but are still a wonderful choice when cooking for two. Feel free to top yours creatively; anything goes when it comes to waffles!
MAKES 2 SERVINGS, ½ (8-inch) BELGIAN WAFFLE EACH
1. Preheat a waffle iron according to the manufacturer’s directions.
2. In a medium bowl, whisk together the flour blend, sugar, baking powder, baking soda, and salt until well blended. In a separate small bowl, beat the egg white with an electric mixer on medium-low speed until stiff peaks form. In a small measuring cup, whisk together the egg yolk, buttermilk, vanilla, and butter.
3. With an electric mixer on low speed, gently add the egg yolk mixture to the egg white mixture and beat until just combined. Add the flour mixture and beat until just combined. The batter should be fairly thick, yet thin enough to spread easily with a spatula on the waffle iron.
4. Coat the waffle iron with cooking spray or lightly grease with oil. Pour the manufacturer’s recommended amount of batter onto the heated waffle iron, which will vary depending on the size of your machine. Close and bake until the steaming stops and the waffle is deeply browned, 4 to 6 minutes, depending on your waffle iron. Repeat with remaining batter, if necessary. Serve immediately with your favorite toppings.
HOW BIG ARE THE WAFFLES? I use a Belgian waffle maker, which makes a slightly thicker waffle than traditional waffle irons. So this recipe makes one 8-inch waffle, which is enough for 2 servings. You might get a different number of waffles (and shorter cooking times), depending on the size of your waffle iron.
