Chicken Tikka Masala

Tikka Masala is an Indian dish that can be made in many different ways, but is technically just chicken simmered in a spicy sauce. My simple version, served over rice, is a meal in a bowl, perhaps accompanied by some sliced fresh fruit to complement the spicy notes.

Makes 2 servings

1. In a medium saucepan, heat the oil over medium heat. Add the onion, garlic, and ginger and cook, stirring constantly, for 1 minute. Add the garam masala and paprika and cook, stirring constantly, for 30 seconds.

2. Transfer the mixture to a blender, add the tomatoes, and puree until the sauce is smooth. (Or, leave the mixture in the saucepan and puree with an immersion blender until smooth.) Return the sauce to the skillet and add the chicken, yogurt, red pepper flakes, salt, and pepper. Bring to a boil and reduce the heat to medium-low. Cover and cook until the chicken is cooked through, 12 to 15 minutes. Stir in the edamame and simmer, uncovered, another 5 minutes.

3. Divide the rice among 2 bowls and top with the chicken and sauce. Serve, garnished with cilantro.
