peach mint preserves

The flavor of mint with peach is most refreshing. Mint always reminds me of cool afternoon breezes, and peaches the heart of summer. I can just picture my forefathers on a porch overlooking oaks, rivers and marshes, enjoying a frosty mint julep and a bowl of creamy, homemade vanilla ice cream topped with these preserves. Back then, they would make this a daily summer afternoon ritual.

CANING NOTES

This is a hot pack, acid recipe.

pH is not an issue. No testing is required.

The recipe makes 6 half pint jars.

The recipe can be halved or doubled.

INGREDIENTS

4 cups diced peaches (peeled)

½ cup chopped mint, packed tight

2 tablespoons lemon juice

1 pack pectin or 1/3 cup bulk pectin

5 ½ cups sugar

Prepare and place all ingredients except the sugar in a pot.

Over a high heat, stirring often, bring to a strong boil. Add the sugar and, stirring frequently, bring to a rolling boil. Begin the 11/2- minute timing before canning; but after 1 minute, check for signs of jelling.
