SMOKED SALMON AND AVOCADO SALAD

 

SERVES 2

SALAD

4 cups arugula

1 avocado, sliced

1 small shallot, sliced

1 cup sprouts

1 cup sliced cucumber

8 to 10 ounces smoked salmon

DRESSING

¼ cup olive oil

⅓ cup lemon juice

Zest of 1 lemon

1 clove garlic, grated

Sea salt

Freshly ground black pepper

In a large bowl, combine all ingredients for salad.

In a small bowl, whisk together oil, lemon juice, lemon zest, and garlic. Season with salt and pepper. Drizzle over salad and toss.
