½ cup raw cashews, soaked in water for at least 2 hours
2 cloves garlic
2 tablespoons olive oil
1 chipotle pepper in adobo sauce
1 tablespoon lime juice
2 tablespoons water
½ teaspoon sea salt
3 cups raw veggies (any approved for Keto-Green 16—cucumber, cauliflower, broccoli, avocado, etc.)
8 ounces smoked salmon
In a food processor, combine all ingredients for cashew dip. Process until smooth. Serve with veggies on the side and a serving of smoked salmon.
