8 ounces cooked chicken
1 shallot, chopped
1 stalk celery, chopped
1 cup chopped cilantro
1 avocado, cubed
¼ cup sliced almonds
2 cloves garlic, minced
2 teaspoons grated fresh ginger
1 teaspoon ground turmeric
½ teaspoon sea salt
½ teaspoon freshly ground black pepper
½ teaspoon cumin
¼ cup lime juice
⅓ cup full-fat coconut milk
4 radicchio leaves (or lettuce)
In a large bowl, combine all ingredients except radicchio. Serve in radicchio leaves.
