LEMON DIJON DEVILED EGGS

 

SERVES 2

2 hard-boiled eggs, halved

2½ teaspoons paleo-approved mayonnaise

1 teaspoon Dijon mustard

½ teaspoon MCT oil

1 teaspoon lemon juice

½ teaspoon sea salt

¼ teaspoon paprika

1 teaspoon minced chives

Scoop yolks out of each half of egg and place into a medium bowl. Add mayonnaise, mustard, oil, lemon juice, salt, and paprika. Whisk until smooth.

Transfer mixture into a small plastic bag, cut a small hole in one corner, and squeeze the mixture into the center of each egg half. Garnish with chives.
