PINEAPPLE LIME GRANITA

 

(Vegan friendly)

SERVES 2

1 cup pineapple chunks

¼ cup lime juice

Zest of 1 lime

Combine all ingredients in a blender and blend until smooth. Transfer mixture to a freezer-safe shallow pan. Place in freezer for 35 to 40 minutes, then remove and scrape with a fork to create frozen pea-sized pieces. Repeat this 2 or 3 times.

After the last scrape, place back in freezer and allow to sit untouched for at least 2 hours before serving.
