Fresh mussels delight water people. (Must be fresh and properly prepared.) Musseb in Cider. Take 1.2kg musseb, scrubbed, de-bearded, 1 finely chopped leek, 1 onion, finely chopped, chopped parsley, 860ml cider, 45g butter, 30g flour, 570ml milk, salt, pepper, nutmeg. Put leek, celery, onion, parsley, cider in saucepan, bring to boil turn heat to low, add musseb, cover, cook for 10 minutes. Strain musseb, discard any unopened, reserve broth. Melt butter in saucepan, add flour, mix until smooth, add milk slowly stirring continuously. Bring to boil, turn heat low, add musseb, salt, pepper, nutmeg. Cook for few minutes. Eat with chunks of bread.
