Massaged Kale Salad

Who doesn’t like a good massage? Well, kale is no exception! Kale is a somewhat tough green, but when you massage the leaves it helps to break down the fibers, resulting in a softer texture and a less bitter taste. You’ll never want to eat kale any other way.

1/3 cup soy sauce or tamari (gluten-free if needed)

¼ cup extra-virgin olive oil

1 tablespoon Dijon mustard

½ tablespoon freshly squeezed lemon juice

1 tablespoon apple cider vinegar

1–2 cloves garlic, minced

5–6 cups chopped kale, stems removed

1 cup diced cucumbers

1 cup diced carrots

¼ cup finely diced red onion

½ cup toasted sliced almonds

Makes 4–6 servings.

1. In a large bowl, mix together the soy sauce, olive oil, mustard, lemon juice, vinegar, and garlic. Stir well until the dressing is blended.

2. Add the kale and, using your hands, gently massage the dressing into the kale. As you work the dressing into the leaves, you should notice them turning a bright green color.

3. Place the remaining ingredients in the bowl and toss until everything is well coated. Serve immediately.

Store in an airtight container in the refrigerator for up to 3 days.

Carrots contains high amounts of vitamin A and other antioxidants that protect the skin from sun damage and prevent premature wrinkling, acne, dry skin, pigmentation, blemishes, and uneven skin tone. While eating carrots will help to keep your skin looking beautiful, you can also use them to make an inexpensive facial mask that will leave your skin glowing. Just mix grated carrot with a bit of honey and spread evenly on your face. Let sit for 2 to 3 minutes and then wash off with warm water.
