Avocados with prebaked tomatoes

Avocados are brimming with essential nutrients, including potassium, B vitamins, and folic acid. They also contain large amounts of the healthy monounsaturated fat, oleic acid, and have at last been acknowledged as having beneficial, health-promoting properties similar to those of olive oil.

Serves 2

7 oz tomatoes (about 3 medium)

1/2 tsp dried tarragon, oregano, or rosemary

2 ripe avocados

1/2 tsp paprika

Pinch of red pepper flakes (optional)

Cut the tomatoes in half, scatter with the herbs, and bake for 30 minutes (or use prebaked tomatoes, see page 39). Cut the avocados in half, scoop out the flesh and divide it between 2 plates. Then mash it coarsely, top it with the tomatoes, and serve it with the paprika, red pepper flakes, and black pepper sprinkled over the top.
