2 medium firm cooking apples
4 Medjool dates, pitted and
chopped
1 tbsp ground almonds
1 tsp ground cinnamon
1/2 tsp freshly ground nutmeg (if you have it)
1/2 oz pecans or walnuts, chopped
1 tsp vanilla extract
Preheat the oven to 300°F. Core the apples, making the hole about 3/4 inch in diameter, so there is enough room for the stuffing, and put them in a baking dish. Place the dates in a small saucepan with 1 tbsp of water and simmer them to form a purée. Stir in the rest of the ingredients, then fill the apples with the mixture. Bake the apples, uncovered, for 40 to 50 minutes. If a knife slides through the flesh fairly easily, they are done. Serve with 1 tbsp Greek yogurt (adds 30 calories) or the coconut or soy equivalent.
