3. Feta and avocado bash

Serves 1

1 avocado

1 oz feta

Squeeze of lime juice

4 outer leaves from Boston lettuce or romaine

Handful of parsley, chopped

Place the avocado and feta in a bowl and use a fork or potato masher to blend them together, then stir in the lime juice. Divide the mixture among the 4 lettuce leaves, season with freshly ground black pepper, and sprinkle with the parsley.
