6. Piri piri chicken sticks

Serves 1

1 boneless, skinless chicken breast

2 tbsp olive oil

1 tsp piri piri seasoning

12 cherry tomatoes

1/4 butternut squash, peeled and cubed (or 12 pieces of chopped store-bought)

3 wooden skewers, soaked in water

Slice the chicken breast into 3 long strips and then dice each strip, aiming to get 12 cubes. Mix 1 tbsp of the oil and the piri piri seasoning in a bowl, then add the chicken, tossing it well so it gets a good coating. Leave it to marinate for a few hours, if time permits.

Toss the tomatoes and butternut squash in a separate bowl with the remaining 1 tbsp oil and some salt and pepper. Thread the kebab pieces onto the skewers, alternating the chicken, tomato, and squash. Place them under a hot grill for 12 to 15 minutes, turning every 3 to 4 minutes. Serve with raita.

Tip: to make your own piri piri flavoring, mix together 1 tsp paprika, 1 tsp oregano, 1 to 2 fresh chiles, seeded and diced (or 1 to 2 tsp red pepper flakes), and 1 tsp garlic, either paste or a finely chopped clove.
