A simple summer classic.
Serves 4
2 (14-oz) cans chopped tomatoes
1/2 cucumber, seeded and cut into chunks
1 garlic clove, minced
1 red bell pepper, seeded and chopped
2 tbsp olive oil, plus more to drizzle
3 tbsp cider vinegar or red wine vinegar
Handful of basil leaves, shredded
12 ice cubes
Put the tomatoes in a food processor, followed by the cucumber, garlic, bell pepper, oil, vinegar, and most of the basil. Season with salt and freshly ground black pepper. Add a few ice cubes, a drizzle of oil, and a sprinkling of basil to each bowl before serving.
