Parmesan crisps

A delicious and surprisingly healthy alternative to cheese straws. What’s more, they take only 2 minutes to prepare and less than that to cook.

Makes 8 portions

4 oz Parmesan, finely grated

4 oz Cheddar, grated

4 oz ground almonds

Preheat the oven to 300ºF and line a nonstick baking sheet with parchment paper. Mix the cheeses and almonds in a bowl, then, using a teaspoon, drop dollops of the mixture on the baking sheet. Bake them for 2 minutes, until they start to brown around the edges. Let them cool slightly and then dig in.

Tip: to prevent the paper on the baking sheet from curling up at the edges, hold it in place with a few blobs of strategically placed oil.
