Serves 6 to 8
12 to 16 slices bread
1/4 c. butter, softened
4 tomatoes, sliced
2 onions, sliced
salt and pepper to taste
Spread bread slices with butter; top half of the slices with tomatoes and onions. Sprinkle with salt and pepper to taste. Top with remaining bread slices, butter-side up. Place sandwiches in an ungreased pie iron and place on coals until toasted, about 4 to 6 minutes.
Gather everyone for a fireside meal...so cozy on a chilly day! Use pie irons to make pocket pies...you can even roast foil-wrapped potatoes in the coals. Make s’mores for a sweet ending.
