Makes 4 servings
2 T. butter
2 T. all-purpose flour
1/3 c. milk
1/2 c. chicken broth
1/2 t. nutmeg
1/4 t. salt
1/4 t. pepper
1-1/2 c. shredded Cheddar cheese
3 slices bacon, crisply cooked and crumbled
2 boneless, skinless chicken breasts, cooked and chopped
2 sheets frozen puff pastry, thawed and quartered
In a saucepan, melt butter over medium-high heat. Stir in flour and mix well. Add milk, broth and seasonings; mix well. Bring to a boil over medium heat; cook until thick enough to coat the back of a spoon. Stir in cheese and bacon; mix until cheese melts. Stir in chicken. Arrange 4 quartered pieces of puff pastry on a greased baking sheet. Spoon 1/4 of chicken mixture onto each piece. Top with remaining puff pastry; press edges down with a fork to seal. Bake at 400 degrees for 15 to 18 minutes. Cool for 5 minutes before serving.
