5 slices rye bread
1/4 to 1/2 c. Thousand Island salad dressing
1-1/4 c. creamy coleslaw
1 lb. sliced deli corned beef
1 lb. sliced Swiss cheese
Place bread on a microwave-safe plate; spread each with one to 2 tablespoons dressing. Top each with 1/4 cup coleslaw, 3 to 4 slices corned beef and 2 slices Swiss cheese. Microwave on high setting for one minute. Continue to microwave for an additional minute, or until cheese melts and corned beef curls.
Reduced-fat cheese can become tough when exposed to heat. For best results in hot sandwiches, grill or bake the rest of the sandwich first, then add shredded reduced-fat cheese. The heated ingredients will allow the cheese to melt.
